Anaerobic fermentation happens in sealed tanks without oxygen. Our Colombia Gesha Buesaco from Huver Castillo Velásquez ferments 48 hours in cherry before washing, for raspberries, lavender syrup and lime. The same lot comes as specialty instant coffee.
