Q69 SUDAN RUME
A rare varietal from Quebraditas Coffee Farm, grown on the slopes of Finca Chorro Alto in Huila, Colombia. Produced by Edinson Argote, a young farmer with a meticulous hand and an obsession with detail.
Only cherries at 80% ripeness or higher make the cut. They're floated to remove the unripe, overripe, and defective. Then the process begins: 12 hours of oxidation in food-grade tanks, dry depulping, and a 96-hour hand fermentation with yeast and thermal shock. The coffee is then dried on raised beds for 76 hours at a steady 40°C, before being stabilised in GrainPro bags.
The result? Apricot jam, mango, turkish delight, and red powerade. Bright, clean, and far from ordinary.
